Our vision is to create a spiritual home for sake outside of Japan at the beautiful and historic Fordham Abbey estate. A place where people from all corners of the globe can come together to experience the magic of this most ancient and divine of beverages.
What we are trying to achieve here at Fordham Abbey is something truly unique and very special. The scale of the ambition is huge and it has taken 7 years of hard work to get here. Our goal is to open up the whole estate as soon as possible with an excellent package of benefits only available to our members. When you join Dojima Member’s Club, you become an integral part of the world’s most exclusive sake club.
Based at the stunning Fordham Abbey estate, close to both Cambridge and Newmarket, the Dojima Member’s Club is your pass into an experience like no other; one that blends the richness of Japanese culture with the rural charm of English country life.
The beautiful 60 acre estate is the site of a former 13th Century Gilbertine priory in the village of Fordham, Cambridgeshire. As well as a brand new, state of the art sake brewery, Fordham Abbey boasts a Grade II listed Georgian manor house built in 1790, orchards and walled gardens, an organic kitchen garden and greenhouse, and a landscaped Japanese garden with a pond and islands. Adjacent to the garden we are building a shrine to the sake gods as a mark of our reverence to our craft. We have also completed a superb event hall with a covered farmers market area and even a pottery workshop with an authentic Japanese tea room. Cherry blossom trees and Japanese maples are dotted among English perennials, flowers and fruit trees making for spectacular scenery. There is nowhere else like this anywhere in the world.
The striking sake brewery building announces itself to visitors with a huge, ornate window in the shape of the Japanese character for sake, 酒 and will include a ground floor cafe/restaurant and a first floor tasting room and bar with a balcony that looks over the whole estate.
Membership of this prestigious club gives you unprecedented access to the many features of this breath-taking estate and also contributes greatly to the upkeep of this national treasure while under the stewardship of Dojima.
The Sake
Brewed since 2018, our world class vintage Cambridge Sake is handcrafted in small batches using premium sake rice from Japan and pure water from the estate. Brewed and fermented with passion and precision, Cambridge is rich and luxurious, perfect for aging in for a minimum of three years or longer in our specially built cellar.
We regularly welcome top brewers and tasters from Japan who are amazed at the flavour and quality of the sake we produce here in England. Cambridge Sake is brewed using an ancient technique where already brewed sake is used in place of some of the brewing water. This style of sake was once the preserve of the Imperial Court and is rare even in Japan. Cambridge Sake is very special and will keep improving as it matures. While we recommend cellaring for 3 – 5 years, this could equally be aged for 7 to 10 years of longer. The Cambridge Cellar itself is magnificent and houses all our vintages on two floors in a beautifully converted brick potting shed. Only our members are allowed to see inside for an annual peek at their personally labelled bottle.
The Membership
Cambridge Sake is priced at £1000 per bottle and comes with a 3 year membership which includes the following package of benefits:-

Dojima Junmai also gains you entry to the exclusive Dojima Members Club. Members will be invited to annual sake events as well as many Japanese art and cultural events here at Fordham Abbey. They will have access to members’ gardens and on event days they will have access to the members’ room in the 18th century manor house.

Dojima Junmai Sake combines an opulent balance of sweetness, richness and acidity which makes for a very special first encounter. Opening the cap you are first greeted by a soft, sweet fragrance followed by the umami that comes from the rice, which gently fills the mouth and develops with the taste and fragrance of banana, mango and the sweetness of honey.
