An early summer evening to enjoy Dojima’s sake and sake kasu obanzai in the secluded walled garden at Fordham Abbey.
Obanzai is Kyoto style small dishes, or Japanese tapas, typically cooked with seasonal produce and dashi broth. We will specially prepare obanzai box using organic vegetables grown in our own walled garden and other carefully selected ingredients.
Sake kasu is the sole byproduct of sake fermentation which is packed with umami and nutrients. It can be used in cooking, baking and even cosmetically.
We use sake kasu of different vintage/maturation that is most suitable for each dish, and we hope to showcase the unlimited potential of sake kasu cooking in the obanzai box.
We offer sake pairing to go with the obanzai as well as a selection of natural wines and Japanese beers.
Entry to the Japanese garden is included.
Complementary Brewery tour is available from 5:30.
