Dojima Sake Kasu (lees) 

Unlike the sake kasu sold in Japanese super markets, our sake kasu is softer, more delicate and  flavoursome. The rice we use to make our products is the very top grade of Japanese sake rice, Yamadanishiki.  We also use a very traditional and labour intensive fune press method.    Even in Japan this type of sake kasu is only available directly from a small number of  breweries. 

We have sake kasu available from Dojima Junmai and Kijoshu Kakehashi(Cambridge)
